Chef Saito opened the restaurant with the vision to introduce a culture to the community on what the traditional sushi experience is like. Every piece of sushi is handcrafted in front of customer with art and precision one at a time.
You have options on the menu that range from single sushi orderings or sashimi orderings, to Omakase (chef's choice) style courses. It is recommend the sushi bar as customer would get to experience the chef's talents up close and personal, and of cause ask any questions to chef.
Sushi Master - Chef Takao Saito
Takao Saito- known by many as Taka- is a highly regarded and influential Japanese sushi chef, who has made a lasting imprint in the Greater Seattle Area. Born in Shibuya, a vibrant neighborhood of Tokyo.
Taka began his culinary journey at the age of 16, where he worked as a dishwasher and delivery boy for a bustling sushi bar in Downtown Tokyo. At 20 years old, Taka graduated from culinary school and began working in the vibrant Tokyo dining scene. He worked as a sushi chef in both restaurants and five-star hotels in Roppongi. After 9 years of working professionally in fast-paced Tokyo, Taka was ready for a change.
In 1988, Taka made the big move to Seattle. This is where he met two other young Japanese chefs who would soon become his business partners. This ambitious group of young men opened a restaurant just outside of Seattle, in the neighboring city of Bellevue. It was called Tokyo. The restaurant was an instant success and became a neighborhood staple.
By 1994, Taka was the last original partner and his wife joined him that same year to run business operations for Tokyo. The two soon opened eight more restaurants all over Seattle and the Eastside. They were also the first people to introduce and sell sushi to the local supermarket delis. Many Seattle sushi chefs have trained under Taka and are now operating their own restaurants. His food is traditional, yet innovative. Taka takes his diners on not only a culinary journey of Japan, but a cultural journey as well.
